This wine originates from the hills of Gussago in Lombardy, an area characterised by a distinct geological matrix. The limestone soil is the cornerstone of Nicola Gatta’s production philosophy, aimed at enhancing the Lombard landscape without compromise. This terrain encourages a dynamic and taut flavour profile, ensuring a pronounced minerality and excellent structure. How it is produced
The production process is distinguished by an essential approach, based on spontaneous fermentation triggered by indigenous yeasts and without the addition of sulphites. The process strictly follows the principles of the Traditional Method, with a prolonged ageing on the lees lasting fifty months. This long maturation gives the wine depth and texture. Finally, disgorgement is carried out in line with the Nature zero dosage style, with no sugar added, resulting in a dry sip with great purity of flavour.
