This is followed by a slow three-year maturation on the lees, a crucial period for imparting structure and enriching the aromatic bouquet. The Extra Brut dosage gives a dry and linear finish, enhancing the smoothness and tension of the drink. This careful vinification ultimately ensures excellent ageing potential, estimated between five and ten years.

The splendid label entitled “Ode to Life”, masterfully illustrated by Kevin De Tunne, depicts an old tractor immersed in unspoilt nature, bearing witness to the company’s organic and sustainable vocation. A true artisanal tribute to the land, matured with the utmost care for three years.

What's more, after 8 years of loyal service, it was time for our labels to make way. We wanted to create new labels that reflected the identity of the House and my own philosophy.
