Ecce Draco Bianco is a still wine with a clear profile, created from a blend of Chardonnay and Trebbiano. This expression of Romagna Bianco Modigliana reveals a fragrant bouquet, characterised by notes of citrus, wildflowers and apple. Its natural freshness and savouriness lead to a balanced sip, ideal when paired with seafood first courses. On the palate, it enhances both oily and white fish, and finds excellent structural balance even with cheeses whenever a white wine with character is desired.

Where it comes from

The wine comes from Modigliana, in Emilia-Romagna, a wine-growing district with a strong hillside identity. The Mutiliana winery cultivates its vineyards with an approach aimed at enhancing the unique features of the local soil through artisanal production that demonstrates care and attention to the quality of the raw material. The area's microclimate gives the grapes a distinct aromatic profile, authentically reflecting the wine’s geographical origin.

How it is produced

Under the technical guidance of oenologist Francesco Bordini, production begins with a careful selection of the grapes. The process is distinguished by long maceration on the skins, essential for giving depth and texture to the must. To preserve the purity of the aromas and the clarity of flavour, ageing takes place exclusively in concrete, with no use of wood. This technical choice results in a wine that is pure and true to its terroir, characterised by remarkable expressive clarity.

A careful reading of the territory, Giorgio Melandri has designed and built vineyards in all three valleys (Acerata, Tramazzo, Ibola) that climb from Modigliana up to the Apennines, with the aim of producing three San.giovese, one for each valley, each bearing the originality of its vineyard.

The meticulous selection of grapes is followed by long macerations and only cement for ageing. Then the taste of waiting.

Mutiliana is part of the Stella dell'Appennino (Star of the Apennines) association, which brings together the municipality's rpdoutori (wine growers) and works to protect the territory and its wine production.
