The geological structure consists of four layers: a surface layer of clayey topsoil, a band of porous clayey sands, a deposit of green illite clay that acts as a water reserve, and a deep base of calcareous marl. This synergy between sand, clay and limestone imparts a distinct mineral character and a dry elegance to the Blanc de Noirs.

How it is produced

Production strictly follows the Traditional Method, beginning with vinification in small stainless steel tanks. The must naturally undergoes malolactic fermentation and is subsequently clarified. The slow maturation on the lees continues in the cellar for twenty-four months, encouraging complex development and a solid structure. The final result is a zero dosage that enhances the purity of the sip, offering a vertical, clean tasting experience free from sugary interference.
