How it is produced
Production follows a meticulous process that begins with the selection of the best bunches between September and October. The grapes are laid out on racks to undergo about three months of drying, a crucial phase that naturally concentrates sugars and aromas. This is followed by gentle pressing and slow fermentation with maceration on the skins for up to thirty days to extract structure and colour. The wine then undergoes a long maturation period, resting for three years in French and Slavonian oak barrels. This ageing imparts profound complexity, ensuring a long ageing potential before release to the market.
