Valpolicella Classico Saseti by Monte dall’Ora is an organic red wine from Veneto with controlled designation of origin, featuring a fresh and easy-drinking profile. This blend combines the Corvina, Corvinone, Rondinella, Molinara and Oseleta varieties. In the glass, it appears ruby red, revealing a fragrant bouquet of small red fruits, iris and rose. On the palate, it stands out for its balance, led by a pleasant savoury tension, menthol notes and crisp spices.
Where does it come from
The grapes are grown on the hills of Castelrotto and San Pietro in Cariano, in the Valpolicella Classico area of Veneto. The vineyards, managed organically, are trained using the Veronese pergola system and benefit from excellent south-east exposure. Between seventy and two hundred metres above sea level, the vines sink their roots into calcareous-calcarenitic soils of Eocene origin, a composition that encourages balanced ripening of the bunches and gives the wine a distinctly savoury character.
How is it produced
Production begins in mid-September with a manual harvest in small crates to preserve the integrity of the bunches. In the winery, natural processes are favoured through spontaneous fermentation with indigenous yeasts in steel and unglazed cement vats, accompanied by gentle pumping over. Finally, maturation in steel and cement continues for several months before bottling, preserving the clarity of the fruit and the varietal freshness.
