The Champagne Symbiose Extra Brut by Minière F&R is a wine produced according to the Traditional Method. This blend of Pinot Noir and Chardonnay displays a pale gold colour, enhanced by a fine and persistent perlage. On the nose, it reveals delicate aromas of white flowers and light-fleshed fruit, accompanied by clear mineral notes. On the palate, the attack is fresh and linear, supported by a pronounced gustatory energy and juicy fruit. The low dosage enhances the pure mineral structure, leading to a dry and persistent finish, ideal for pairing with shellfish, sushi, and soft cheeses.

Where it comes from

The wine originates in the heart of the Hermonville terroir, located in the renowned Champagne region. The grapes come from two specific plots: Les Voirmissa, dedicated to Pinot Noir, and Les Moineaux, where Chardonnay is cultivated. The vines sink their roots into complex silty-clay-sandy soils resting on a deep bed of lacustrine limestone. This particular geological composition gives the wine a strong identity, fostering a vibrant gustatory tension and ensuring a sip of extreme precision and elegance.

How it is produced

This cuvée is crafted strictly following the Traditional Method. The must ferments and matures in old oak barrels, ageing for a long time on fine lees without undergoing malolactic fermentation, a choice aimed at preserving a sharp acidity and a vertical profile. After the prise de mousse, the wine rests on the lees for a period ranging from eight to ten years, developing extraordinary complexity. After disgorgement, a further rest in the cellar of at least six months allows it to achieve the perfect harmony typical of this Extra Brut, finished with a minimal dosage of only 3.5 grams per litre.

Grapevines have been cultivated in Hermonville since the 12th century. We are the fourth generation to work on the estate. Founded in 1919 by our great-grandfather Alfred, he created his own wine press and sold his wines to the merchants of Reims.
The estate has grown extensively over the years.

After completing our winemaking studies and several years of professional experience, we took over the estate in 2005 and decided to produce our own wines in oak barrels so as to promote the values of our exceptional heritage.

With almost 8Ha of land, our vineyards are primarily located in Hermonville, whose magnificent, south-east facing hillsides are flooded with sunshine.

The upper hills are covered in sand-loam soil while the lower areas are loam, clay and sand. These well-draining soils contain high levels of minerals which force roots downwards to feed the vines deep within the soil and saturate the sap with mineral elements.
