Nivole Moscato d’Asti by Michele Chiarlo is a sweet and lightly sparkling white wine with a Protected and Guaranteed Designation of Origin (DOCG), produced in Piedmont from Moscato Bianco grapes. Characterised by a floral bouquet with notes of peach and apricot, it is creamy on the palate, with a fine perlage and a pleasant freshness. Production involves a slow fermentation in autoclaves at a controlled temperature followed by microfiltration, techniques that enhance its aromatic purity and natural effervescence.
Origin
The grapes ripen in Piedmont, in the prestigious Canelli area, historically recognised as the premier territory for Moscato Bianco. The hillside vineyards, Guyot-trained, enjoy excellent sun exposure. The roots run deep into soils of marine sedimentary origin, characterised by sandy-calcareous white marls. This particular soil composition gives the grapes a clear aromatic profile and a pleasant sensation of freshness. Cultivated since classical times, the grape variety finds its most authentic expression in this area.
Production method
Production begins with a manual harvest, followed by the soft pressing of the whole grapes. The must is stored in steel tanks at a low temperature to preserve its aromatic integrity. A slow fermentation in autoclaves at a controlled temperature allows the natural carbon dioxide to be retained, creating its characteristic and light effervescence. At the end of this process, microfiltration stabilises the wine, halting yeast activity and ensuring maximum clarity, to deliver a glass that is always fragrant and refined.
