Description
Type of wine
The San Pedro de Yacochuya Torrontes from the Michel Rolland Collection is a still white wine that faithfully represents Argentine oenological excellence. Made entirely from Torrontés grapes grown in the Salta region, it is distinguished by its distinctly aromatic profile and its vibrant acidity. In the glass, it offers a bright colour, anticipating a fresh, agile, and remarkably clean tasting experience. The vinification in steel ensures an energetic finish on the palate, supported by pleasant floral and herbaceous notes. This essential and brilliant style makes it an ideal companion for spicy dishes, cheeses, and seafood recipes.
Where it comes from
This wine originates in the Yacochuya area, within the famous Cafayate Valley located in northern Argentina. The grapes come from fifty-year-old vines that take root in clay-siliceous and gravelly-siliceous soil, capable of bestowing a precious aromatic finesse. The most distinctive feature of the territory is the altitude, with the vineyards situated at over two thousand metres above sea level. The harsh high-altitude climate ensures significant temperature variations, which are essential for the development of aromas and for the perfect acid balance of the grapes.
How it is produced
The production process begins with a careful manual harvest carried out during the early hours of the morning, an essential practice to preserve the freshness and integrity of the bunches. Subsequently, the grapes undergo a double selection followed by a delicate skin maceration inside a special press. Alcoholic fermentation takes place at low temperatures in small, temperature-controlled stainless steel tanks. This processing technique completely excludes the use of wood, aiming to maintain the varietal purity and the gustatory energy of the wine until bottling.
