Matteo Correggia Alta Langa Extra Brut Severina is a Piedmontese Traditional Method sparkling wine with a rigorous and dry profile. The blend combines Pinot Noir and Chardonnay grapes, carefully processed to achieve a fine and persistent perlage. On the nose, clear floral aromas and fragrant hints of bread crust emerge. On the palate, it displays remarkable roundness thanks to its creamy texture, balanced by a lively acidity that prolongs the finish, making it ideal for accompanying starters, fish dishes and cheeses.
Where it comes from
The grapes come from the municipality of Benevello, in Alta Langa, and are grown at an altitude of six hundred and fifty metres. This high elevation is essential for preserving the aromatic freshness and acidic tension of the bunches. The vines grow on sandy soils with a loose texture, with minimal presence of clay and silt. These soil characteristics give the wine great finesse, favouring a refined aromatic profile that enhances the natural vocation of the area.
How it is produced
After manual harvesting, the must undergoes gentle pressing and fermentation in steel tanks. In spring, bottling takes place to initiate the secondary fermentation, as required by the Traditional Method. The wine rests for about thirty-six months on the lees in underground cellars carved into marl rich in fossils. The absence of ageing in interfering barrels preserves the maximum expressive integrity and purity of the grape varieties until the moment of tasting.

All the wines by Matteo Correggia are the result of personal experience, and there is no room for fashion or doctrine. The concern has always persevered when the results have been good, but never stopping to dare or consider what could be done better. Wine making takes place in modern wine cellars, in stainless stell vats at controlled temperature, while ageing is done in the large rooms created under the hill where Marun first began, in contact with the fossil rich millennial marlstones, that give them the dampness and quitness necessary as the perfect compliment to the whole process in the vineyards and wine cellars. the barrels and casks are carefully selected for the wines they will host, and gradually replaced according to a twenty-years pratice geared to avoid olfactory impact from the wood. All wines are bottled on the premises, in dedicated areas, where a large warehouse for stocking the bottles underground is attacched. The bottles are also labeled here, in keeping with Matteo Correggia Concer tradition.
