Bila-Haut Blanc is a still white wine crafted by M. Chapoutier, an authentic expression of the Côtes du Roussillon. This blend combines Grenache Blanc, Grenache Gris and Macabeo, presenting itself in a pale yellow hue with greenish highlights. The nose reveals intense citrus aromas of lemon and grapefruit, enriched by floral notes and delicate smoky hints. On the palate, it is rounded and balanced by a pronounced acidity, with a vibrant finish that enhances its clear minerality.

Where it comes from

This white originates in Languedoc-Roussillon, in the picturesque Agly valley. The vineyards stretch across plots at low altitude on clay-limestone soils and higher sites rich in granite and gneiss. The higher altitudes encourage slow ripening, giving the wine a solid structure and persistent savoury freshness. M. Chapoutier’s production approach respects the rhythms of nature, allowing the land to fully express its evolutionary potential.

How it is produced

Production begins with a rigorous manual harvest carried out at dawn to preserve the fragrance of the grapes. After destemming and crushing, the must undergoes cold settling to ensure its purity. Vinification takes place in stainless steel tanks at controlled temperature, preserving the identity of the grape varieties. At the table, it proves a versatile companion, perfect for pairing with fish dishes in delicate sauces, white meats and grilled sardines.
