This geological matrix gives the grapes optimal ripeness and a distinct mineral tension. How it is produced
Louis Roederer employs infusion vinification, macerating the Pinot Noir together with must extracted from the Chardonnay to trigger a joint fermentation. A portion of the base wines is aged in oak barrels, adding complexity without overpowering the fruit. To maintain a crystalline acidity, malolactic fermentation is avoided. The prise de mousse is followed by a long maturation on the lees in the bottle and a subsequent period of rest after disgorgement, essential stages for achieving integrated effervescence and a pronounced creamy texture on the palate.
