Where it comes from
This red wine is crafted in Santenay, from old vines aged between forty-five and sixty years, mostly concentrated in the Hâtes area. The agricultural management preserves the authentic expression of the soils by using only organic fertilisers, natural grassing and integrated protection. The use of the traditional Cordon Royat pruning limits yield and ensures perfect sun exposure for the bunches, transferring all the territorial richness of Burgundy into the glass.
How it is produced
The creation of the wine begins with a manual harvest, followed by crushing and destemming that preserves a small proportion of whole bunches. The meticulous vinification process unfolds over a month: it starts with cold maceration, continues with fermentation conducted exclusively by indigenous yeasts, and concludes with a delicate extraction phase. The final ageing takes place over a period of between ten and sixteen months in French oak barrels. The measured use of new wood supports the natural structure of the wine, enhancing the fruity aromas without compromising its typical freshness.
