Livia Fontana Barolo Fontanin is a still red wine originating from the hills of Piedmont, made entirely from Nebbiolo grapes. An authentic expression of Barolo, it stands out for its intense colour ranging from deep ruby to warm garnet highlights. The bouquet reveals a complex interplay of macerated violet, balsamic notes, liquorice root and nutmeg. On the palate, it offers a bold flavour and an impressive structure, supported by an elegant tannin, soft and well-defined, ensuring the wine impeccable balance and a long potential for ageing over time.
Where it comes from
The vineyards are located in the area of Castiglione Falletto, at an altitude between three hundred and three hundred and fifty metres. The soil is characterised by the Marl of Sant’Agata Fossili enriched with sandy veins, a geological composition that gives the wine extraordinary aromatic finesse. The microclimate and altitude favour optimal ripening of the grapes, ensuring a deep and lasting taste persistence. This precise territorial identity is reflected in the glass as a robust, harmonious and extremely well-balanced body.
How it is produced
Production begins in mid-October with a rigorous manual harvest followed by careful selection of the grapes. After gentle pressing, the must ferments in stainless steel tanks at a controlled temperature, with maceration lasting about twenty days, aided by pumping over and délestage. Ageing involves slow maturation for a period ranging from thirty to forty months in traditional oak barrels, followed by a period of rest in the cellar. Due to its significant structure, it is ideal paired with intensely flavoured dishes such as paccheri with pork ragù, mixed boiled meats with salsa rubra, matured cured meats or entrecôte with black truffle.
