Capolavori Pinot Grigio Dama Ermellino by Cantine Leonardo da Vinci is a still white wine from Emilia-Romagna that faithfully expresses the character of the Rubicone. Made from Pinot Grigio grapes, it appears a pale straw yellow in the glass. The aromatic bouquet reveals clear notes of broom and jasmine flowers, set against a fresh herbaceous background. Where it comes from
This wine originates in Emilia-Romagna, in particularly suitable areas between the towns of Bertinoro, Faenza and Brisighella. The vines grow at an altitude between fifty and one hundred metres above sea level, rooted in medium-textured clay and calcareous soils. In particular, the typical gypsum veins of the Faenza area help to impart those savoury sensations found on tasting. Cantine Leonardo da Vinci was founded in 1961 by the union of thirty farms. This journey demonstrates a profound winegrowing culture and a close connection with history, celebrating in its name the great Renaissance genius.
How it is produced
The grapes are harvested between the beginning and the middle of September, coming from vineyards trained using the spurred cordon and Guyot methods. Vinification involves strict cold fermentation in stainless steel tanks, carried out with selected yeasts at a maximum temperature of 13°C. This temperature management is essential to preserve the original aromatic richness of the Pinot Grigio. Afterwards, the wine undergoes stirring on fine lees for two months. This maturation phase gives a more defined texture, integrating the freshness of the aromas with the structural savouriness before bottling.

The original headquarters, restructured and enlarged, are still the operative centre today. The winery is situated in the borough of Vinci, just 5 kilometres from the birthplace of the world famous artist and inventor Leonardo.
The co-operative takes its name from the great man, paying homage to the mind of the man who was universally recognised as a genius and to emphasise its deep-rooted bond with the territory, the same bond which Leonardo felt and whose surname is specifically associated with the village where he was born on 15 April 1452.
Today, Cantine Leonardo da Vinci is a pioneering co-operative, innovative and modern, which relies on the work and grape production of its 160 members. Read more
