Description
What kind of wine it is
Legrand Latour Champagne Eocene Brut Nature is an organic wine from the renowned Champagne region. This pas dosé sparkling wine is crafted from a harmonious blend of Pinot Meunier and Chardonnay grapes, expressing a dry and elegant profile. In the glass, it displays a straw yellow colour illuminated by golden highlights, enriched by a fine and persistent perlage. On the nose, it offers aromas of ripe fruit blended with clear notes of yeast. The palate reveals a rich and excellently persistent taste, characterised by a distinct mineral imprint that invites you to savour every sip.
Where it comes from
Champagne comes to life in a dedicated territory, defined by a subsoil rich in fossils that imparts a distinctive character to the fruit. The geo-oenological approach of the Legrand Latour winery aims to enhance this territorial matrix, delivering a persistent and distinctive minerality to the glass. For four generations, the family has been dedicated to viticulture, following sustainable practices and taking the utmost care at every stage of production. The flavour profile of this wine makes it ideal for pairing with lean fish dishes or delicate selections of cheese.
How it is produced
The production follows the Traditional Method, an essential choice to ensure the wine's extreme finesse. The vinification involves twelve months of maturation in barrels, followed by a long period on the lees, which amplifies the aromatic complexity and structure of the sip. As a Brut Nature, no final sugar dosage is added. This ageing process results in a dry and clean drink, enhancing its natural freshness and guaranteeing impeccable balance on the palate.
History and Curiosities
For four generations, Legrand Latour has combined family tradition with modern techniques. The name Éocène pays tribute to the subsoil of the vineyards, rich in fossils, reflecting a geo-oenological approach that enhances its minerality. The 2020 vintage captures this heritage through twelve months of barrel ageing. This classic method pas dosé is matured for a long time on the lees, offering a pure tasting experience that beautifully expresses the house style and the excellence of Champagne.

Having the honour of being the representative of Champagne Legrand-Latour today, it is my duty to preserve the values we hold dear. My father's passion for researching fossils in our terroir led me, through a geo-oenological approach, to express the influence of this Champagne subsoil, rich in fossils, and to highlight the mineral expression of our champagnes.
