How it is produced
The Pinot Grigio grapes, harvested at full ripeness, are destemmed to begin two different vinification processes. One part undergoes cold maceration and ferments at a controlled temperature in steel tanks. The remaining portion macerates on the skins for four days, then completes fermentation in oak barrels. The two fractions mature separately for about six months, with weekly bâtonnage; malolactic fermentation occurs exclusively in the portion aged in wood. The process concludes by blending the batches into a final harmonious and dry blend.
