The different company terroirs give the grapes a distinctive character, strongly linked to their land of origin. Founded in 1978, the winery adopts strict sustainable agricultural practices, culminating in the achievement of organic certification. This production philosophy ensures vineyard management that is attentive and respectful of the plants' natural balance.
How it is produced
The production process requires time and patience, beginning with a harvest in mid-September. The bunches rest for about three months through careful drying in a fruit loft, essential for concentrating sugars and aromas. Subsequently, the grapes are destemmed and pressed, producing a must that undergoes fermentation in barrels. The wine's evolution continues for two years in these wooden barrels, before further ageing in small oak casks. The process concludes with bottling in the third year and a period of rest in the cellar before release to the market.
