Description
What kind of wine it is
This Franciacorta Dosaggio Zero from Le Marchesine is a sparkling wine made exclusively from Chardonnay grapes. Produced according to the strict Traditional Method, it stands out for the complete absence of sugar dosage, offering a dry and pure flavour profile. The glass is characterised by a fine and persistent perlage, capable of releasing clear aromas of wild fennel, star anise and grapefruit zest, accompanied by subtle hints of white pepper. On the palate, it is incisive and savoury, supported by a vibrant acidity that lends elegance and a pronounced structural tension.
Where it comes from
The grapes grow in Lombardy, on the slopes of La Santissima hill in Gussago, one of the most renowned areas of Franciacorta. The vineyards sink their roots into a deep calcareous subsoil, a fundamental geological element that gives the wine its characteristic saline imprint and a vertical texture. Guyot training and low yields allow for great aromatic precision to be concentrated in the bunches. This terroir enhances a tense and vibrant expressive identity, faithfully reflecting the connection with its place of origin and the stylistic choice of zero dosage.
How it is produced
The harvest is carried out by hand, followed by gentle pressing to extract only the free-run must. The white vinification takes place in stainless steel at a controlled temperature, with rapid cooling to prevent malolactic fermentation and preserve the natural freshness. As required by the Traditional Method, the wine undergoes secondary fermentation in the bottle and a prolonged ageing on the lees for seventy-two months. This long rest at constant temperatures enriches the sip with profound structural complexity, culminating in a persistent finish where consistent spicy and peppery notes emerge.
History and Curiosities
Born in 2000 from the passion of the Biatta family, producers since 1985, this sparkling wine expresses the Lombard terroir. The 100% Chardonnay grapes come from the La Santissima hill in Cussago, on a limestone substrate. Produced using the traditional method, it matures for 72 months on the lees, developing extraordinary elegance. The Dosaggio Zero enhances a vibrant and incisive sip, awarded 5 Grappoli Bibenda and 3 Bicchieri Gambero Rosso.
