What kind of wine it is
Paleo Bianco by Le Macchiole is an organic white wine with the typical geographical indication of Tuscany, a blend that harmoniously combines Chardonnay and Sauvignon Blanc, vinified in steel and barrel. It displays a straw yellow colour with greenish highlights, releasing clear aromas of white peach, citrus fruits and vanilla. On the palate, a pronounced minerality emerges, offering a fresh and savoury sip. The balance between the expressiveness of the fruit and a slight toasted note defines its deep structure, making it the ideal pairing for lean fish and cheeses, and it also boasts remarkable ageing potential.
Where it comes from
This wine originates in Bolgheri, Tuscany, from grapes carefully cultivated in the Casa Nuova and Ulivino vineyards. The soils have a medium-textured clay composition, enriched by a significant presence of alluvial skeleton and limestone fragments. This specific soil matrix is fundamental in giving the wine its natural savoury character. The territorial identity imparts a pronounced Mediterranean character to the organoleptic profile, maximising the freshness of the grape varieties and ensuring a result that is always elegant and clear.
How it is produced
The harvest takes place at the end of August from vines trained using Guyot and spurred cordon methods. In the winery, cold maceration of the must and destemming preserve the integrity of the varietal aromas. This is followed by gentle pressing and static clarification. Fermentation is divided between stainless steel containers and barrels. The wine then undergoes eight months of ageing, split between barrels of various uses, new woods and ceramic amphorae. This production process perfectly integrates the structural freshness with the delicate notes acquired during maturation.
