What kind of wine it is

Cinabro, produced by the Le Caniette winery, is a still red wine with Indicazione Geografica Tipica from the Marche region, offering an authentic interpretation of the Grenache grape, matured in small barrels. It presents itself with a brilliant ruby red hue, a prelude to an aromatic bouquet where intense notes of red fruits and delicate spicy nuances stand out. On the palate, it reveals a significant structure, supported by a dense tannic texture and a distinct mineral imprint. The sip is deep and persistent, making this wine the ideal companion for mature cheeses and particularly structured meat dishes.

Where it comes from

This red is born among the hills of Ripatransone, in the heart of the Marche region. The vines grow at two hundred and eighty metres above sea level on calcareous and loose soils, fundamental elements that give the wine its typical mineral perception. The agronomic management follows the principles of organic viticulture, favouring low yields per hectare to concentrate the aromas and protect the balance of the natural ecosystem. The spur-pruned cordon training system encourages balanced and optimal ripening of the bunches.

How it is produced

The production process begins with an eight-day maceration in wooden vats, designed to carefully extract colour and structure. After malolactic fermentation, a long maturation of thirty months in small barrels allows the tannins to soften, defining a complex gustatory architecture. The wine then completes its journey with six months of rest, ensuring a profile of good body and dryness, perfectly consistent with the minimal residual sugar present.
