How it is produced
Production begins in the first half of October with a rigorous selection of the grape bunches. The must ferments in truncated conical vats, where maceration is managed to achieve a calibrated extraction of colour and phenolic matter. With the arrival of spring, the wine begins its ageing process in new barrels for over thirty months.
