What kind of wine it is
Cerasuolo d’Abruzzo Spelt by La Valentina is an organic rosé wine with controlled designation of origin produced in Abruzzo, able to combine the freshness with the structural richness of Montepulciano. Made through skin maceration and fermentation in steel, its bright pink colour anticipates intense aromas of dog rose, fresh cherry, pomegranate and wild strawberries. On the palate, it is full-bodied, enriched by a pleasant saline tension and a delicate tannic texture, finishing with a hint of aniseed and almond, making it ideal to accompany cured meat starters, soups, carpaccio and sliced meats.
Where it comes from
The grapes come from vineyards located in the municipality of Spoltore, within the renowned area of the Colline Pescaresi in Abruzzo. This hilly area benefits from optimal south and south-west exposure, ensuring ideal ripening of the bunches. The vines, which are over thirty years old, are trained using the Abruzzo pergola system and sink their roots into medium-textured clay soils, at an altitude between 150 and 300 metres. These specific pedoclimatic characteristics give the wine its typical structure and pronounced savouriness, faithfully expressing the authentic essence of the territory.
How it is produced
The creation of this Cerasuolo d’Abruzzo begins with the harvest in October, followed by targeted skin maceration for about eighteen hours. This phase, accompanied by the technique of bleeding the must, allows the extraction of the desired colour and aromatic compounds. The subsequent fermentation takes place slowly in steel vats at a controlled temperature, preserving the freshness of the aromas. Ageing continues for four months, mainly in steel and for the remaining part in small barrels. To guarantee the integrity of the product, the wine is bottled without fining or forced stabilisation, offering a sip that is extremely true to its nature.
