The La Ca’ Nova winery has been operating in this area since the seventeenth century, maintaining a deep connection with the characteristics of the soil. Beneath the estate lie the historic Infernot, fascinating underground chambers hand-carved into the Pietra da Cantoni. This particular geological formation, made up of marl-limestone sandstone rock, profoundly influences the vines, helping to shape a varietal expression marked by aromatic clarity and refined taste, typical of the region’s hilly nature.
How it is produced
Made exclusively from Nebbiolo grapes, this still red wine expresses its qualities best when served at a temperature of 14-16 °C. To fully appreciate the definition of the small red fruit aromas and floral notes, it is advisable to decant for about an hour before serving, an ideal step to further soften the tannic texture. When stored in the cellar under optimal conditions, it has an estimated longevity of between 5 and 10 years, during which time the flavour profile will retain its characteristic freshness and persistent finish.
