Acquagiusta Vermentino is a still white wine made from Vermentino grapes, a true expression of the Tuscan Maremma. Where it comes from
The grapes come from the soils of Tenuta La Badiola, located in the heart of the Maremma near Castiglione della Pescaia. The rows extend across the central part of an alluvial cone, immersed in an agricultural ecosystem rich in biodiversity, among hills, olive groves and the typical Mediterranean scrub. The vineyards are positioned to benefit from optimal exposure to soil, sun and wind. Careful agronomic management involves spur-pruned cordon training with a density of five thousand vines and a limited yield, fundamental choices to ensure marked freshness and absolute expressive precision.
How it is produced
The production cycle begins with a rigorous manual harvest, during which the bunches are placed in small crates to perfectly preserve their integrity. In the winery, a purely conservative technique is followed: whole grape pressing at very low pressures prevents the extraction of undesirable elements, ensuring the utmost finesse of the aromas. After decanting through static cold stabilisation, the must matures for four months in stainless steel tanks at a controlled temperature. The resting period ends in February, completing a meticulous process that fully enhances the wine’s clean, precise and elegant profile.

The Acquagiusta vineyards cover thirty hectares, divided into two vineyards: we chose to position our vineyards by studying the exposure of the plants to the elements, in order to recreate the ideal conditions of water, soil, sun and wind and to exploit the strong character of the soil.
We want our wines to be pure and sincere: this is why we work with the utmost respect for natural processes, intervening as little as necessary. In this way, we enhance the grapes, keep the characteristics of the territory intact and create an authentic product.
Our work is based on tradition and experimentation. While rooted in Tuscan winemaking tradition, our style is constantly evolving: only by making the most of the fruits of the earth can we produce a wine that embodies its spirit and character. Read more
