What kind of wine is it

Timepiece Sauvignon Blanc is a South African white wine that reflects the authentic character of its region. Produced by Jordan with Sauvignon Blanc grapes, it expresses a fresh and well-structured style. The bouquet weaves together aromas of elderflower, melon and sourdough, enriched by an intriguing hint of kelp. On the palate, the sip is bright and direct, finishing with a long and distinctly saline aftertaste. The meticulous work in the cellar gives the wine remarkable flavour breadth, balancing freshness and aromatic intensity.

Where does it come from

The vines grow in Stellenbosch, a renowned area of South Africa characterised by a Mediterranean climate, refreshed by the breezes of the Benguela Current and the morning mists of False Bay. Situated on south-facing slopes, the vineyards encourage slow and balanced ripening of the grapes. The soils, composed of decomposed granite and topsoil, ensure excellent natural drainage. This geological matrix imparts a pronounced mineral character and a pleasant clarity on the palate. Jordan employs organic and sustainable farming methods, protecting local biodiversity.

How is it produced

The process is based on careful management of the must. Fermentation takes place in a combination of French oak barrels and clay amphorae, with malolactic fermentation occurring in both vessels. In some selected barrels, the process is spontaneous. This is followed by six months of ageing on the lees: regular batonnage in the barrels and the constant natural suspension provided by the amphora add depth and tactile richness. The final balance between the different components enhances the elegance and precision of this wine.

Gary’s parents, Ted and Sheelagh, bought the now 164-hectare Stellenbosch property in 1982, and embarked on an extensive replanting programme, specializing in classic varieties suited to the different soils and slopes.
