Where does it come from

How is it produced
The process is based on careful management of the must. Fermentation takes place in a combination of French oak barrels and clay amphorae, with malolactic fermentation occurring in both vessels. In some selected barrels, the process is spontaneous. This is followed by six months of ageing on the lees: regular batonnage in the barrels and the constant natural suspension provided by the amphora add depth and tactile richness. The final balance between the different components enhances the elegance and precision of this wine.
