It stands out for its bright straw yellow colour and a fine, persistent perlage. The aromatic profile is clean, with notes of white-fleshed fruits, apricot, hazelnut and fresh almond. On the palate, it expresses freshness and elegance, finishing with a fruity and persistent aftertaste, perfect for pairing with shellfish and sushi.
Where does it come from
This wine comes from Vincelles, in the Marne Valley, from a family estate active in viticulture since the seventeenth century. The vineyards face south and south-west on calcareous-clay and silty soils, which give the wine tension and precision. The estate is managed according to the principles of biodynamic agriculture, aiming to preserve the integrity and identity of the terroir.
How is it produced
Production begins with the manual harvesting of bunches from old vines over forty years old. Primary fermentation takes place in stainless steel to preserve the varietal aromas, while the prise de mousse follows the rules of the Traditional Method. A 40-month maturation on the lees enriches the wine with remarkable structural complexity. It is recommended to serve it at a temperature of 6-8 °C to enhance every nuance.

The vineyards at Vincelles, in the middle of the Vallée de La Marne, were taken over in 2010 by Jerome, who decided to work the 6 hectares of his property in Biodynamic agriculture. Strongly convinced of the principles to be applied in agriculture, he shows a real revolution in the small commune of Vincelles.
Jerome has a very delicate hand that characterises all his champagnes with a veil of oxidation in the glass. The dosage is also moderate, as the grapes arriving at the cellar are very healthy. Read more
