What kind of wine is it
Produced by Jerome Blin exclusively from Chardonnay grapes, this Champagne Blanc de Blancs pas dosé is made using the Traditional Method. In the glass, it displays a bright golden yellow colour, enlivened by a fine and persistent perlage. On the nose, it is intense, characterised by notes of citrus, white-fleshed fruit and dried almonds. The palate combines strength and elegance in a dry and precise style, with a long and persistent finish, rich in spicy and balsamic sensations.
Where does it come from
The grapes come from Vincelles, in the Vallée de la Marne. Here, Jerome Blin cultivates the vineyards following the principles of biodynamic agriculture, continuing a family tradition that has lasted for generations. The six hectares of vineyards benefit from a south and south-west exposure on limestone soils, with silty and clay components. This terroir gives the Chardonnay a marked linearity, translating the characteristics of the land into a taut and defined aromatic profile.
How is it produced
After manual harvesting, vinification takes place in both steel tanks and oak barrels. The prise de mousse follows the Traditional Method, with 27 months of maturation on the lees to give the wine structure. The absence of final dosage ensures a dry and rigorous profile. At the table, it naturally accompanies seafood starters, shellfish and sushi, and is also perfect paired with fried fish and soft cheeses.

The vineyards at Vincelles, in the middle of the Vallée de La Marne, were taken over in 2010 by Jerome, who decided to work the 6 hectares of his property in Biodynamic agriculture. Strongly convinced of the principles to be applied in agriculture, he shows a real revolution in the small commune of Vincelles.
Jerome has a very delicate hand that characterises all his champagnes with a veil of oxidation in the glass. The dosage is also moderate, as the grapes arriving at the cellar are very healthy. Read more
