Where it comes from

How it is produced
Production begins with manual harvesting and a rigorous selection of the bunches. Vinification involves the use of a proportion of whole grapes and proceeds with spontaneous fermentation triggered by indigenous yeasts, accompanied by carefully managed punch-downs. The ageing process initially takes place in barrels for twelve months, using about a quarter new wood. Subsequently, the different batches are blended into a single cuvée and rest for a further six months in demi-muid, thus consolidating the structure and aromatic precision.
