Where it comes from
This wine is produced in France, in the heart of Beaujolais, within the renowned Morgon area. The grapes come from the Côte du Py area, where the old vines draw nourishment from soils composed of granite and schist located on an alluvial cone. This particular geological matrix gives the glass a distinct territorial identity and a pleasant smoothness. Jean Foillard manages the vineyards with extreme rigour, completely excluding the use of herbicides and synthetic pesticides to preserve the balance of the surrounding environment.
How it is produced
The production process begins with a late harvest and a meticulous selection of the bunches. In the winery, methods inspired by Jules Chauvet are followed, avoiding invasive interventions such as chaptalisation. The decision not to filter allows the original complexity of the must to remain intact. As this is an unfiltered wine, it is advisable to decant for about an hour before consumption, to encourage oxygenation and the full expression of the aromatic bouquet. The result is a clean and essential profile, awarded 92 points by Vinous critics.
