The absence of fining and the choice to bottle the wine unfiltered preserve the integrity of the aromatic profile and the natural consistency of the must. In the glass, it reveals itself as a wine with a direct and authentic taste, ideal for accompanying beef, lamb or mature cheeses.
Where it comes from
This intense red originates in South Australia, carrying with it the expression of plots carefully selected by the producer JC’s Own. The grapes come from various renowned sites, including the areas of Angaston, Light Pass and Greenock, each dedicated to enhancing the characteristics of a specific variety. This multi-site management allows the territorial features to be blended into a single harmonious profile, clearly defining a regional picture and faithfully reflecting the authentic Australian identity through essential and attentive agricultural practices.
How it is produced
The production process begins with a manual harvest, organised so that the different varieties are picked within a very short time frame. The bunches are foot-trodden, followed by joint fermentation in concrete vats, a technique that allows the grapes to harmonise from the very first days. After gentle pressing with a basket press, the wine rests for nineteen months, alternating between oak barrels and concrete containers, a fundamental step to stabilise the substance and define the structure before final bottling.
