Where it comes from
This cuvée is a true expression of the Verzenay area, where the vineyards boast the historic Grand Cru classification. The Champagne reveals the identity of the soil through a complex and well-defined bouquet. On the nose, there are clear herbaceous notes, combined with deep hints of humus and subtle touches of vanilla. The connection with the marine environment emerges in distinct iodised sensations, which bring freshness and verticality to the taste. In this region, Pinot Noir develops a distinctive savoury component, capable of harmonising the saline hints with the primary fruit characteristics.
How it is produced
The production process involves thirty months of ageing on the lees, essential for imparting structure and complexity. On tasting, the soft texture introduces notes of candied and dried fruit, supported by a vibrant and continuous saline tension. At the table, it finds an ideal balance with seafood, shellfish and dishes based on white fish, also elegantly accompanying delicate starters. An excellent pairing is with cheese, particularly extra-aged mimolette, which enhances its clean and highly refined finish.

In Champagne the numerous vine growers cultivated their vines throughout the year and sold their harvest to the trade houses. Paul Rousseaux, born in 1884, followed a project shared with numerous other vine growers: produce his own champagne and market it himself (in 1999 we tasted the contents of one of these bottles, the wine was still fresh, with the color of old gold).
Paul had two children, Pierre and Michel. Pierre married Charlotte Degouy and they continued to cultivate the vineyards and to make their champagne, despite the conflicts that devastated Europe and our region during this period. They had four children: Jacques, Anne-Marie, Luc and Dominique. And today... Jacques, the eldest son, continues to cultivate the vineyards of the family, who trust in him. With his wife, Bernadette, they have developed their market during 30 years.
