Where it comes from
This sparkling wine hails from Trentino Alto Adige, in the heart of the Trento area. The Pinot Noir grapes are grown at Maso Michei, nestled in a truly high-altitude Alpine setting. The vineyards, cultivated at 850 metres above sea level, represent a crucial environmental factor, imparting great freshness and defining the wine’s taut profile. This pronounced mountain character encourages slow and ideal ripening, faithfully reflecting the authentic character of the region.
How it is produced
The grapes are hand-harvested in mid-September, followed by gentle pressing. The must is clarified to remove cloudy particles before fermentation at a controlled temperature. The following spring, selected yeasts are added to the base wine to initiate the second fermentation in the bottle, as required by the Traditional Method. After the prise de mousse, the brut undergoes a patient 60-month maturation on fine lees, thus developing its full structural and aromatic complexity.
