What kind of wine it is
Chianti Classico Riserva Levigne by Istine is an organic red wine with a distinct territorial character, a true expression of the Sangiovese grape. In the glass, it displays a brilliant ruby colour, a prelude to deep aromas of blackberries, black cherries, roots, burnt wood and leather. On the palate, it reveals an elegant and structured profile, offering a powerful sip with well-polished tannins and a persistent mineral savouriness on the finish. Its dynamic taste harmoniously accompanies mature cheeses, game, flavourful first courses and stews.
Where it comes from
This red originates in the Chianti Classico area of Tuscany, from high hillside vineyards trained using the Guyot system between the municipalities of Radda and Gaiole in Chianti. The vines sink their roots into stony soils, characterised by alternating marl limestones, such as Alberese and Galestro, combined with clay fractions. This geological matrix gives the wine a marked tension. To enhance the identity of each specific area, the winery carries out separate vinification of grapes from the different plots.
How it is produced
After a strictly manual harvest, alcoholic fermentation takes place in cement vats at a controlled temperature for about fifteen days. The wine then undergoes a submerged cap maceration for forty-five days, also in cement, to extract colour and tannins in a balanced way. Once malolactic fermentation is complete, ageing begins in Slavonian oak barrels for twelve months, keeping the different parcels separate. The final blend is then created, which rests for a further year in oak barrels before completing its evolution with bottle ageing.

Thanks to a lengthy maturation in Slavonian oak, this elegant red acquires a remarkable mineral savouriness, an excellence awarded an impressive 93 points by the renowned Vinous guide.

With the introduction of the second generation into the company, it is natural to start our own production in the bottle. The 2009 harvest and the first 3000 bottles of Chianti Classico concretely represent what has always been the great passion for wine, thus integrating and completing the family business.
The commitment for the future is to evolve and grow, while remaining faithful to the traditions and to our territory, trying to enhance as much as possible what nature is offering us and the viticultural peculiarities of the highest lands of the Chianti region.
