Mabilia is a Calabrian rosé wine by Ippolito 1845, a faithful expression of the Cirò territory. Produced from Gaglioppo grapes and vinified in steel, it presents a crystalline cherry-pink appearance with ruby reflections. On the nose, it reveals a floral and fruity bouquet, defined by clear aromas of black cherry and rose petals, enhanced by delicate mineral nuances. On the palate, it shows a well-defined structure, offering a fresh, savoury and enveloping sip. Origin

This rosé is born in the most suitable lowland areas of Cirò Marina, an area of Calabria historically linked to winemaking excellence. The name pays homage to Mabilia, an 11th-century Norman princess who lived in the lands of the Marquisate of Crotone, linking the wine's character to its noble local roots. Ippolito 1845 tends these vineyards to enhance the authentic territorial expression, offering a taste that reflects the Mediterranean charm and the area's rich agricultural history.

How it is produced

The process begins with a careful manual harvesting of the clusters. To extract the cherry-pink hue and primary fragrances, the Gaglioppo grapes undergo a maceration on the skins for twenty-four hours at a controlled temperature. Alcoholic fermentation takes place in stainless steel tanks, ensuring a clean and fragrant organoleptic profile. Finally, the wine undergoes a calibrated ageing in steel before completing maturation with a necessary resting period. This production choice aims to protect the natural freshness of the fruit, creating a balanced and harmonious body.

It was in 1845 when Vincenzo Ippolito embellished his initials on the country house in the Cirò marina between vineyards, olive groves and orange trees. In a very varied agriculture, the vines begin to play an important role, although the wine consumption was strictly local. With more than 160 years of history, Ippolito Winery is the oldest winery in Calabria. Located in the historic center of Cirò Marina, the heart of Calabrian viticulture, the farm includes an estate of over 100 hectares, distributed between gentle hills and sunny plains close to the Ionian Sea, located in the classical Cirò area. The corporate mission has always been the recovery and valorisation of native grape varieties such as Gaglioppo, White Greek, Calabrian and lastly the Sheep. Through constant research, the use of innovative techniques, direct control of all production processes, we seek in our wines elegance, exclusivity and identity with their own territory.
