What kind of wine is it
Baci sulla Bocca is a still white wine made from Vermentino grapes, an authentic expression of the Tuscany region. In the glass, it displays a bright straw yellow colour with greenish highlights. The bouquet combines jasmine, peach and lemon zest, enriched by notes of white pepper and clear mineral hints of tuff and saline stone. On the palate, it is enveloping, supported by a pleasant citrusy freshness and savoury flashes that provide persistence. Thanks to its balanced structure, it elegantly accompanies shellfish dishes, lean fish, sushi, white meats and fresh cheeses.
Where does it come from
This wine originates from the hills of Tuscany, specifically in the Figline Valdarno area. Il Palagio now operates as a certified organic farm, with historical roots dating back to the 16th century. The Vermentino vines, trained using the spur-pruned cordon method, have an average age of twenty years and benefit from an ideal hillside ecosystem. The terroir imparts the wine's typical mineral component, balancing the aromatic richness of the grape variety to deliver a harmonious, clean and linear sip.
How is it produced
The production of Baci sulla Bocca begins with the manual harvesting of the grapes, ensuring optimal ripeness is achieved. In the winery, the bunches undergo fermentation in stainless steel at a controlled temperature, a process essential for preserving the primary aromas of Vermentino. The process concludes with six months of ageing in the same steel containers. This technical choice, overseen by oenologist Riccardo Cotarella, enhances the wine's lively taste and maintains a soft and elegant texture, fully respecting the varietal's identity.
