What kind of wine it is
Pian di Nova by Il Borro is an organic red wine from Tuscany that interprets the Super Tuscan style with a modern profile. This blend of Syrah and Sangiovese displays a deep ruby red colour, enhanced by subtle violet highlights. The aromatic bouquet is intense, characterised by floral notes of violet and pronounced hints of red and black fruits, accompanied by a finish reminiscent of black pepper and rosemary. On the palate, it is smooth and enveloping, revealing vibrant freshness and refined tannins that lead the sip towards a long and harmonious finish.
Where it comes from
The grapes come from vineyards located in the hilly area of San Giustino Valdarno, north of Arezzo. The vines grow at around two hundred metres above sea level, with roots sinking into clay-based soils enriched with sand and stones, elements that give the wine's structure a clear gustatory definition. The Il Borro estate operates with a strong focus on agricultural sustainability within an area surrounded by woodland. In this particular microclimate, the vocation of the land is expressed by blending local identity with the spicy character of the cultivated varieties.
How it is produced
Production begins with separate harvesting and vinification for the two varieties. The bunches undergo a cold maceration for two days in refrigerated environments, followed by fermentation in stainless steel tanks with a skin contact period of about three weeks. The wine then matures for twelve months in French oak barrels of various ages, acquiring complexity and balance. Afterwards, the wine rests in steel and undergoes a final ageing in the cellar for a further six months before release, thus preserving the fruit's expressiveness and vibrancy.
