Borrigiano is an organic red wine with a fresh and smooth character. Produced by the Il Borro estate, it is created from a harmonious blend of Sangiovese and Cabernet Sauvignon. It displays a ruby colour with purplish highlights, hinting at a lively and dynamic sip. Supported by polished and elegant tannins and a balanced acidity, it offers a clean finish. It pairs perfectly with red meats, game, traditional Tuscan soups and cheeses.
Where it comes from
The grapes come from the heart of Tuscany, in the renowned area of Valdarno di Sopra, near San Giustino Valdarno. The estate operates under organic management, prioritising sustainability to enhance the authenticity of the region. This care is reflected in intense aromas of red fruit, dominated by ripe cherry. The bouquet is completed by elegant spicy notes of white pepper, hints of ginger, lavender and sweet tobacco.
How it is produced
Vinification involves fermentation in cement vats with complete malolactic fermentation. Maturation continues in large truncated-cone oak barrels, an essential stage to soften the tannic structure. After a brief period in stainless steel, the process concludes with a period of ageing in the bottle, resulting in a wine that is extremely pleasant to drink, combining freshness with refined spicy nuances.
