Where it comes from

This sparkling wine originates from vineyards classified as Premier Cru in the Champagne region. The agricultural work is overseen by Guillaume Sergent, a producer who operates on an artisanal scale, adopting careful organic and sustainable viticulture practices. The meticulous management of the rows allows the unique characteristics of the terroir to be transferred to the glass, resulting in a linear and characterful rosé. With excellent ageing potential, the wine retains its energy over time. The ideal serving temperature is between 6 and 8°C.

How it is produced

The entire winemaking process is managed in the cellar with a focus on preserving the purity of the fruit. The rosé base comes to life through the saignée technique, extracting colour and structure in a targeted manner. The secondary fermentation in the bottle faithfully follows the Traditional Method, ensuring a highly precise organoleptic profile. To maintain the grape variety's identity, maturation involves careful use of oak barrels. This precise production approach, combined with a very low dosage, delivers a taut, vertical and satisfying sip.

  • Start up year: 1842
This young oenologist takes over the family estate in 2009. It is actually a micro company because the vineyard does not even cover 2 hectares of which 70% is Pinot Meunier, 20% Chardonnaye and 10% Pinot Noir.

Previous generations have always chosen to rely on a cooperative for the entire process of wine production, since Guillaume's entry into the company, the wine-making process has been carried out within the company, producing a limited quantity every year, but always in slight growth. None new wood is used during processing so as not to alter the character of the wine.

Les Pres Dieu is the first cuvée made by Guillaume and worked in two wooden barrels. The production is only 615 bottles. The dosage of 4.5 g/l has been established; this allows the freshness of the sandy terroir of Vrigny to be maintained and the slight oxidation to be balanced. which gives this cuvée its complexity.
