Description
What kind of wine it is
Les Pres Dieu by Guillaume Sergent is a Premier Cru Champagne that showcases the finesse of Chardonnay. Crafted using the Traditional Method, it displays a pale golden yellow colour enlivened by a fine and continuous perlage. On the nose, it releases aromas of white flowers, ripe fruit and spices. On the palate, it is distinctly dry thanks to its Extra Brut profile, led by pronounced minerality. The aromas are echoed in the tasting, which finishes with fresh biscuity notes. It is ideal with shellfish, sushi, fried fish and soft cheeses.
Where it comes from
This cuvée originates from the vineyards of Vrigny and Coulommes, offering a taut sip that best represents Champagne from this area. The wine's identity is rooted in sandy soil, an element that ensures structure and marked savouriness. The vines, over thirty years old, are cultivated using organic and sustainable practices, with full respect for the environment. The Premier Cru classification guarantees high-quality grapes, capable of faithfully reflecting the character of the terroir.
How it is produced
Vinification takes place in Guillaume Sergent's cellar. Fermentation occurs in wooden barrels, where the wine rests for the entire maturation. The decision not to use new wood preserves the integrity of the Chardonnay. Subsequently, the secondary fermentation in bottle follows the timings required by the Traditional Method. This meticulous work results in a dry and balanced wine, characterised by great technical definition and sensory precision.
