C’era una volta Buttafuoco Oltrepò Pavese by Losito e Guarini is a Lombard red wine created from a skilful blend of Barbera, Croatina and Uva Rara. To the eye, it displays a brilliant ruby colour with slight garnet hues, releasing a deep bouquet reminiscent of blackberry, raspberry, coffee and chocolate. On the palate, it reveals a dry, full and structured profile, enriched by spicy notes of cloves and black pepper. The balanced tannins and velvety texture, supported by a pleasant freshness, make it the ideal companion for braised dishes, grilled meats and mature cheeses.
Where it comes from
This wine originates in Lombardy, among the historic hills of Oltrepò Pavese. The vines, trained using the Guyot system, sink their roots into clay soil characterised by calcareous marl and gypsum, a geological composition that encourages optimal grape ripening and gives the wine its typical robustness. The name Buttafuoco refers to a dialect expression describing it as a wine capable of warming the soul like fire. Legend has it that even the Austro-Hungarian soldiers were so captivated by this structured wine that they decided to lay down their arms.
How it is produced
The production process begins with meticulous manual harvesting. After crushing and destemming, the grapes undergo a delicate pre-fermentation maceration, designed to extract maximum colour and aromatic intensity. Fermentation takes place at a controlled temperature with selected yeasts, followed by ageing in steel to preserve the purity of the fruit and the freshness of the final product. This careful process allows the vibrancy and natural expressive power of the blend to remain intact, ensuring a harmonious and authentic sip.

Its fame is intertwined with the story of a ship from the Austro-Hungarian Empire called “Buttafuoco”: it is said that the soldiers, sent to Oltrepò to fight against the Kingdom of Sardinia, were so captivated by the velvety taste of this Oltrepò Pavese DOC that they abandoned their weapons, choosing peace over war.
