What kind of wine it is
The Maremma Toscana Ceccante Cabernet Sauvignon by Grillesino is a still red wine with an intense ruby colour. On the nose, it releases aromas of blackcurrant and morello cherry, enriched by well-integrated hints of liquorice, vanilla and coffee. On the palate, it is generous, with a pleasant acidity, great elegance and a consistent, persistent finish. The absence of filtration before bottling preserves its integrity, giving it remarkable structural longevity capable of evolving for up to a decade.
Where it comes from
The grapes are grown in Magliano in Toscana, at around two hundred and fifty metres above sea level, within the Maremma Toscana. The clay and mineral composition of the soils favours the optimal aromatic expression of the bunches. Oenologist Saverio Notari uses exclusive clones of Cabernet Sauvignon selected in collaboration with the Bordeaux Institute of Oenology. The wine's name pays tribute to a Tuscan folk hero who, according to legend, found shelter among the vines, drawn by the sweetness of the fruit. Produced only in the best vintages, this red fully reflects the authentic Tuscan terroir.
How it is produced
Harvested at the end of September, the grapes macerate in steel vats on the skins for fifteen to twenty days. The wine is then aged in French and American oak barrels, where it completes malolactic fermentation. To best appreciate its olfactory and gustatory profile, it is recommended to decant for one hour and serve at a temperature between sixteen and eighteen degrees. At the table, it proves ideal alongside succulent steaks, lamb, game, mature cheeses and intense black truffle-based dishes or mushrooms.
