How it is produced
Vinification begins with alcoholic fermentation in open wooden vats and stainless steel tanks at a controlled temperature. This is followed by malolactic fermentation in barrels, a crucial step to soften the acidity and define the tannic structure. The wine then matures in wooden barrels for a period of ten months. The process concludes with a final ageing of at least six months, which gives the palate an elegant finish and a finely spiced texture.
