How it is produced
The production process begins with careful green thinning in summer to optimise the ripening of the bunches before harvest. In the cellar, a traditional submerged cap fermentation takes place, lasting about three or four weeks, to ensure balanced extraction. The wine matures in Slavonian oak barrels for around forty months. This lengthy ageing consolidates the tannic structure in preparation for subsequent release. To fully appreciate its complexity, it is recommended to decant for one hour and serve at a temperature of 18°C.
