Giorgi Spumante Tenuta Cassinello Metodo Classico Brut is a sparkling wine made from Pinot Noir grapes. Its production follows the strict principles of the Traditional Method, offering in the glass an intense straw yellow colour enriched by bright golden highlights. The aromatic profile is broad and caressing, characterised by clear notes of sage, mint and apricot, with a delicate hint of vanilla. On the palate, it is dry and velvety, with a harmonious and rich sip supported by lively acidity. The tasting is notably persistent, enlivened by a fine and continuous perlage.
Where it comes from
This wine originates in the Oltrepò Pavese area, among the municipalities of Montecalvo Versiggia, Santa Maria della Versa and Rocca de’ Giorgi. The Giorgi winery cultivates its vineyards on calcareous and clayey soils, which impart a defined structure and a solid flavour profile to the wine. This specific soil composition supports freshness and ensures a long persistence on the palate. The Pinot Noir grapes are grown with a controlled yield, allowing for optimal ripening ahead of the harvest, which takes place between the end of August and the beginning of September.
How it is produced
The Pinot Noir bunches undergo a gentle pressing to extract only the free-run must. After static clarification, the first fermentation takes place in stainless steel tanks at a controlled temperature with selected yeasts. The following spring, the secondary fermentation occurs in the bottle according to the rules of the Traditional Method. Ageing involves a period of at least 36 months on the lees, a crucial stage for defining the aromatic profile and achieving a fine mousse. After disgorgement, the sparkling wine rests for a further six months before being released to the market.

The Giorgi family has always firmly focused on the entire production chain: from the grape to the bottle, laying the foundations from the beginning to realise their grand project of creating a significant wine company. This project became a reality as early as 1970, when the brothers, Gianfranco and Antonio, built a second winery, modern and technologically very advanced, in Canneto Pavese.
With the construction of the third winery in Camponoce, Giorgi finally achieved national consecration in the 1980s, with a sales network of 80 representatives and a presence in the best restaurants and wine shops nationwide.
Today Giorgi Vini exports to 59 countries worldwide, has more than 160 agents in Italy, and has won the most important international and national awards (Three Glasses by Gambero Rosso and Five Bunches sommelier).
