What type of wine it is

The Soave Classico Contrada Salvarenza Vecchie Vigne by Gini is a still white wine from Veneto made from organically grown Garganega grapes. An authentic expression of the Soave Classico territory, it is distinguished by a deep aromatic profile, with notes of apple, citrus, yellow flowers and hints of almond. On the palate, it is rich, round and dense, characterised by a marked savouriness and a clear mineral imprint. This Denominazione di Origine Controllata wine, fermented in wood, with a persistent finish, boasts remarkable ageing potential.

Where it comes from

The grapes originate from the hills of Monteforte d’Alpone, at one hundred and fifty metres above sea level, with a south-east exposure and ideal microclimates. The vineyards consist of centuries-old vines trained in the Veronese pergoletta style, rooted in soil with a limestone matrix and thin layers of tuff, an essential element for the wine's flavour profile. The name of this cru is inspired by the legend of Renza, a young girl saved in these lands, where today the cellar carved into the rock dedicated to maturation also stands.

How it is produced

Production begins in late October with the manual harvesting of the bunches. The must undergoes brief contact with the skins, followed by soft pressing and rapid cooling. Alcoholic fermentation takes place entirely in wood with indigenous yeasts, within large barrels and seasoned casks. Subsequently, the wine ages for approximately twelve months in barrels on its own natural lees. The process concludes with a final rest of at least six months in an environment with optimal temperature and humidity.

Tradition has it that the young woman was saved by a noble knight in the very place where the century-old vines of this cru grow today.
