Sé by Gianfranco Fino is a still red wine that enhances the qualities of Primitivo. Where it comes from
The grapes are grown in the heart of the Salento peninsula, in the areas of Sava and the neighbouring provinces of Taranto and Brindisi. The vines grow at an altitude of about one hundred metres above sea level, sinking their roots into red calcareous-clay soils. This particular terroir, combined with the warm and dry climate tempered by the constant breezes from the Ionian Sea, encourages optimal ripening of the grapes. The maritime influence and the composition of the soil are directly reflected in the glass, ensuring a substantial sip that always maintains a pleasant fresh drive.
How it is produced
The harvest takes place at the end of August, selecting the bunches from bush-trained vines, a cultivation system that imparts a strong personality to the fruit. After vinification, the wine rests for nine months in barrels, alternating between new wood and previously used containers. This careful ageing process shapes a silky tasting texture, defining the structure without ever overpowering the wine's vibrancy. The final result harmonises the flesh of ripe fruit with elegant spicy notes.
