Barolo Cannubi by Giacomo Fenocchio faithfully expresses the character of Nebbiolo. Originating from the prestigious Barolo area, it presents a deep garnet colour enriched with elegant ruby highlights. On the nose, it offers a fruity and floral bouquet, enhanced by warm and intense spicy notes. On the palate, the experience is refined, supported by a velvety profile and a harmonious balance that defines its entire structure. This red pairs ideally with red meats, game and mature cheeses, offering its best after a preliminary decanting of about an hour.
Where it comes from
This wine is born in the historic Cannubi vineyard, cultivated since 1972 at around 280 metres above sea level, with a south-east exposure ideal for the optimal ripening of the grapes. The terroir is characterised by soils of Tortonian origin, rich in marl and tuff, with a significant presence of sand that ensures perfect drainage. This specific geological composition gives the wine a precise territorial imprint and an orderly gustatory texture, the result of agricultural practices focused on environmental sustainability.
How it is produced
Harvested in the first half of October, the Nebbiolo grapes undergo a long maceration with spontaneous fermentation by indigenous yeasts, lasting about forty days in stainless steel tanks. The maturation process involves an initial period in steel, followed by thirty months of slow evolution in large Slavonian oak barrels and further ageing in the bottle. The minimalist approach in the cellar aims to enhance the authenticity of the terroir, ensuring the wine a marked longevity, estimated between ten and fifteen years.

The grapes are grown in the vineyard Bussia, 4 hectares of land exposed to the southwest on clayey and lime-rich, iron-rich land. Since 1972 the company also owns a vineyard in Cannubi, and since 1995 it is part of the property also a vineyard in Villero, another historic, highly vocated vineyard.
The cultivation in all the vineyards is based on the principles of sustainability aimed at reducing the environmental impact more and more. All of this has led Claudio to vinify with a safe hand, without consulting, in a traditional manner and minimizing the interventions in the cellar, obtaining as a result of sincere wines, respectful of terroir and vintage; Wine away from homologation, but incredibly fascinating for their intense aromas and perfumes: in one word, unique.
