Where it comes from
The grapes grow on the northern slopes of the volcano, within a natural amphitheatre located in Solicchiata, in the municipality of Castiglione di Sicilia. This ungrafted vineyard, situated at six hundred and twenty metres above sea level, is home to vines planted around 1925, tended with an organic and sustainable approach. The distinctive lava rock soil and northern exposure support the development of these ancient vines, encouraging bunches with marked concentration and a strong sense of place.
How it is produced
Vinification begins with destemming and gentle crushing, preserving the integrity of the Nerello Mascalese. Fermentation is started with a pied de cuve of indigenous yeasts, accompanied by a maceration on the skins of about fifty days to encourage the extraction of structure. Maturation continues in neutral fibreglass vats for eighteen months and is completed with further ageing in the bottle, ensuring a precise evolution focused on the wine’s natural longevity.
