Description
What kind of wine it is
The Chassagne-Montrachet by François Carillon is a still white wine from Burgundy, made from Chardonnay grapes. In the glass, it displays a bright straw yellow colour, enhanced by golden highlights. On the nose, it reveals floral aromas and delicate hints of white fruits, which precede a structured sensory profile. The palate is characterised by distinct savouriness, accompanied by a fine and elegant texture that leads to good persistence on the finish. This wine is a true expression of the grape variety and its chosen terroir, ensuring a balanced and precise tasting experience.
Where it comes from
The origin of this white wine lies in Burgundy, in the prestigious areas of Chassagne-Montrachet and Puligny-Montrachet. The vineyards are rooted in clay-limestone soils, a geological composition fundamental to imparting this wine with its distinctive minerality and structure. The region clearly defines the product’s identity, enhancing the natural characteristics of Chardonnay. Production is overseen by François Carillon, heir to a family of winegrowers established in these historic lands since the early 17th century, ensuring a profound knowledge of the terroir.
How it is produced
Winemaking follows strict methods aimed at preserving the integrity of the fruit. Both alcoholic and malolactic fermentation take place in wood. Afterwards, the wine undergoes barrel ageing for one year, using a proportion of new oak. This technical step allows the integration of toasted nuances without overpowering the varietal essence. At the end of this stage, the wine rests for a further five months for the final blend, an essential period for stabilising the aromas and ensuring the fine and delicate texture appreciated during tasting.
